Shows all the potential uses of alpha-lactalbumin (ALAC) in human nutrition. It is a protein that constitutes more than a third of the total protein in human milk. Excellent physical characteristics (clean flavor profile, high water solubility and heat stability) and biological characteristics (excellent protein quality). Uses: infant formula (used to create milk more similar to breast milk) and supplement to improve sleep or mood and a potential use to treat cancer and improve immune response. In addition to a high presence of tryptophan, ALAC is rich in sulfur amino acids with a ratio of 5:1, as well as containing BCAAs (branched chain amino acids), lysine and potentially bioactive peptides. For this reason it has potential as a protein supplement for child development, promotes gastrointestinal function and protects muscle mass in aging adults.
